Undercounter vs modular vs countertop ice machines
Form factor is the second decision after pounds per day. The same crescent or half-dice ice is sold as a self-contained undercounter, a modular head that sits on a bin, or a small countertop / ADA-height cabinet.

Undercounter
Use when daily need is in the undercounter production band and you can live with the built-in bin. A cafe that burns 120 lb by 2 p.m. and then sits empty will starve if the bin is only 38 lb, even if the 24-hour rating looks fine.
Current examples on this site (manufacturer “up to” / 70/50 where stated):

Height includes legs on most sheets. A “39″ H” Hoshizaki KM undercounter will not fit a 36″ counter without a different model or an ADA-height SKU.
Modular
Use when you need more ice than a bin-in-cabinet makes, or you want a big dump bin for a banquet. The head does not store ice. Order a bin from the compatibility list on the spec sheet (Hoshizaki B-series, Manitowoc D-series, Scotsman B-series, Ice-O-Matic B-series).

Two slim 22″ heads side by side is a documented Hoshizaki layout for more production in one bin footprint.
Countertop and compact cabinets
Marketing uses “countertop” for hotel-room and office machines that are still floor-standing, just short and narrow. Hoshizaki’s AM-50BAK (top hat, 54 lb, 14-7/8″ W, <34″ H) and C-80BAK (cubelet, 92 lb, same cabinet family) are the current examples we cite. Scotsman CU0415 is a 15″ undercounter cube, not a hotel-room top-hat, but it competes for the same 15″ gap.
True portable countertop units (no drain, no 24-hour commercial rating) are outside this directory.
Drain, air, and sanitation
All three forms need potable water, a drain (gravity or a listed pump), and a scoop or dispenser — not bare hands. NSF listing is on the spec sheet. This is not legal advice; inspectors treat ice as food. Read the installation manual for clearance. Many air-cooled undercounters are front-in / front-out so they can sit in a tight run; modular heads usually want side or top air. See air-cooled vs water-cooled.
